Smoked Gouda and Apple Grilled Cheese with Slow Cooker Butternut Squash Soup
As the weather cools down, we wanted to make something simple and comforting. I had dinner with Taylor, our beloved sales rep. With ingredients from the Grant Park Farmers Market, she created an easy as 1, 2, 3 dinner for us. She is a woman of many talents!
Ingredients from GPFM:
4-5 Granny Smith Apples from Panorama Apple House
-It’s apple season, y’all. We recommend you take full advantage of it and make a trip to North Georgia and enjoy the leaves and cooler weather.
Butter (We’re in the south so get ready to cover your bread it in for the perfect grilled cheese)
Coconut Milk or Cream
Here’s the 1, 2, 3:
1. Make the soup.
Chop up your squash, red onion, and 2 apples. Add squash, red onion, apple, carrot shreds, vegetable stock, salt and pepper, garlic, cinnamon, and cayenne into slow cooker on low for 6-8 hours. All ingredients to taste. Seriously, this is the easiest recipe.
The best part about this recipe is that the soup can basically make itself while you’re at work. Throw it all in a slow cooker and let it simmer until soft. Toss it in a blender with some coconut milk or cream. Blend and add to desired thickness.
2. Make a grilled cheese.
A proper grilled cheese should be a staple of everyone’s early food education. We added a little flare to the classic with some smoked gouda and granny smith apples. Slather that thing in butter and throw it in a skillet until golden brown, or darker. Grilled cheeses are like marshmallows, there are a lot of opinions about how well done they should be, but there really is no right answer.
3. Serve and Enjoy!
This meal is meant to be quick, easy, and cozy. Enjoy it in front of a fire, with friends, or in a sweater on a patio with your favorite fall brew.
